1 pint of cherry tomatoes (or heirloom/regular tomatoes)
1 head of broccoli
1 seedless cucumber
1 cup of Italian dressing
Ground black pepper and salt to taste
Extra virgin olive oil to season water
Directions
In a large pot, bring water to a boil. Add extra virgin olive oil and salt to prevent your pasta from sticking.
Add your pasta to the boiling water and allow it to cook as directed.
As the pasta is cooking, prep your veggies. Cut your broccoli into florets, cut your cherry tomatoes in half, and dice your cucumber into cubed pieces.
Add all your veggies to a large bowl. At this time, your pasta should be ready.
Drain your pasta and add it directly on top of your veggies. Mix well. Pour the Italian dressing across the top and mix again. Add your black pepper and salt and mix again. Refrigerate your dish so the dressing can get into your veggies and pasta.
When you're ready to serve, give it another good mix and enjoy!
