Ratatoille

  • 1 eggplant, cubed
  • 1 zucchini, cubed
  • 1 red onion, peeled and chopped
  • 3 cloves garlic, minced
  • 1 Tbsp olive oil
  • 2 cans diced tomatoes in juice (or 3 cups fresh tomatoes)
  • Black pepper (to taste)
  • Fresh herbs, such as basil and rosemary, chopped (to taste)

TIPS:

  1. Serve with whole-grain bread or whole-wheat pasta.
  2. Top with parmesan cheese for an added boost of flavor.
  3. Season with oregano, thyme, or red pepper.
