- 1 eggplant, cubed
- 1 zucchini, cubed
- 1 red onion, peeled and chopped
- 3 cloves garlic, minced
- 1 Tbsp olive oil
- 2 cans diced tomatoes in juice (or 3 cups fresh tomatoes)
- Black pepper (to taste)
- Fresh herbs, such as basil and rosemary, chopped (to taste)
TIPS:
- Serve with whole-grain bread or whole-wheat pasta.
- Top with parmesan cheese for an added boost of flavor.
- Season with oregano, thyme, or red pepper.
