Celebrate National Watermelon Day with a Fresh Salad

This refreshing Watermelon and Cucumber Salad delivers a serving of fruits and veggies.

National Watermelon Day is Aug. 3 and we’re preparing to celebrate with one of our favorite summer dishes: Watermelon and Cucumber Salad.

It’s simple to make, refreshing and affordable since its fresh ingredients are in season, says Jamie Palefsky, Nutrition Education Specialist. The combination of watermelon and cucumber means you’ll receive a serving of fruits 그리고 vegetables while the addition of feta means there’s also some protein.  

재료

6 cups watermelon, cubed and deseeded*

4 cups cucumber, cubed*

½ cup balsamic vinegar

6 tbsp feta cheese, crumbled

Optional

민트 또는 바질 잎, 다진 것

붉은 양파, 얇게 썬 것

Preparation

In a large bowl, stir together the cucumber and watermelon.

Add the vinegar and stir.

Top with feta cheese (and mint or red onions if using) and toss.

Chill for 15 minutes (or longer) and serve.

*Fruits and vegetables can be purchased whole for a more cost-effective option. If you’re limited on time, pre-cut produce is an alternative.
