- 1 cup low-fat cheese of your choice, cubed or shreddedÂ
- 2 green onions, diced
- 1 bell pepper, diced
- 1 medium tomato, diced
- 1 medium carrot, shredded
- ½ cup light/low-fat Italian or vinegarette dressing
- 1 tbsp fresh or dried herbs (basil, parsley, cilantro, etc.)Â
- Optional: Add roasted chicken, deli meats, or chickpeas for added protein
