INGREDIENTS:

  • 4 cups whole wheat pasta, cooked following package instructions and cooled
  • 1 cup low-fat cheese of your choice, cubed or shredded 
  • 2 green onions, diced
  • 1 bell pepper, diced
  • 1 medium tomato, diced
  • 1 medium carrot, shredded
  • ½ cup light/low-fat Italian or vinegarette dressing
  • 1 tbsp fresh or dried herbs (basil, parsley, cilantro, etc.) 
  • Optional: Add roasted chicken, deli meats, or chickpeas for added protein
