  • 3 cups quinoa, cooked following package instructions and cooled
  • 1 15.5oz can of chickpeas, drained
  • 1 small English cucumber, cubed
  • 2 medium Roma tomatoes, cubed
  • ½ small red onion, thinly diced 
  • 1 cup feta cheese, cubed or crumbled
  • 1 cup pitted Kalamata olives (optional)
  • ½ cup olive oil
  • ½ large lemon, juiced
  • 1 tbsp dried oregano (or 3 tbsp fresh parsley)
  • Black pepper to taste
