Eggplant: Vegan Eggplant Parmesan
Ingredients
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1 (24 ounce) jar of tomato basil pasta sauce
- 1 teaspoon brown sugar
- 2 1/2 teaspoons ground black pepper
- 5 tablespoons garlic powder
- 5 tablespoons onion powder
- 4 tablespoons Italian seasoning
- 1 cup whole wheat flour
- 1 1/2 cups oat milk (or milk of your choice)
- 3 cups breadcrumbs
- 1 large eggplant (sliced 1/2 inch thick)
- Canola oil (for pan frying)
- Salt to taste
- Optional: vegan shredded cheese
