Eggplant: Vegan Eggplant Parmesan

Ingredients

  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 (24 ounce) jar of tomato basil pasta sauce
  • 1 teaspoon brown sugar
  • 2 1/2 teaspoons ground black pepper
  • 5 tablespoons garlic powder
  • 5 tablespoons onion powder
  • 4 tablespoons Italian seasoning
  • 1 cup whole wheat flour
  • 1 1/2 cups oat milk (or milk of your choice)
  • 3 cups breadcrumbs
  • 1 large eggplant (sliced 1/2 inch thick)
  • Canola oil (for pan frying)
  • Salt to taste
