  • 1 lb boneless, skinless chicken breast, cut into thin pieces
  • 2 tablespoons olive oil
  • 4 heads bok choy, sliced into pieces
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  •  

For sauce:

  • 1/3 cup low-sodium soy sauce
  • 1 tablespoons brown sugar
  • 1 tablespoons corn starch (or 2 tablespoons flour)
  • Optional: 1 jalapeno, minced
