- Place a large pot of water on the stove on high heat to boil.
- While water is boiling, wash and cut cauliflower into small pieces and discard leaves and tough stems.
- Place cut cauliflower into boiling water. Allow to boil for 6 minutes and drain well.
- Place hot cauliflower, parmesan, cream cheese, garlic, salt, pepper, milk, and butter into a blender and puree until smooth. If your blender has a removable cap, remove it and cover the lid with a kitchen towel to allow the hot steam to escape.
- Pour into a bowl, serve, end enjoy!
TIPS:
- Top with chives for an authentic garlic mashed potato experience.
- If you don’t have a blender use a potato masher or the bottom of another bowl in step 4 to mash cauliflower and then mix in remaining ingredients.
