Try This Crunchy Chicken Salad

At North Texas Food Bank, we love spring because it means fresh produce is coming back after the cold winter months. To celebrate the return of fresh fruits and veggies—and to say thank you for your amazing support—NTFB is sharing one of our favorite recipes to nourish your day.

Ingredients

2 cups cooked chicken, cubed or shredded

1/2 cup celery, diced

1/4 cup green pepper, diced

1/4 onion, diced

1/2 cucumber, peeled and diced

1/2 cup red grapes, halved

1 apple, unpeeled and diced

1/4 cup plain yogurt

Instructions

  1. Combine celery, green pepper, onion, cucumber, grapes and apples in large bowl.
  2. Stir in plain yogurt and mix well.
  3. Add chicken and stir lightly until all ingredients are combined.
  4. Keep refrigerated and serve on lettuce, crackers or bread.
