Roasted Beet Salad

• 1 bunch beets, washed and greens cut off 
• Beet greens, washed and rinsed 
• 1 medium orange, peeled, segmented,and chopped 
• 1 Tablespoon olive oil
• 1/4 teaspoon dried thyme
• 1/4 teaspoon salt
• Black pepper to taste

1. Preheat oven to 425°F. 
2. Wrap whole beets in foil pouches, making sure they are tightly shut. 
3. Roast beets for 1 hour or until fork easily pierces through the beet. 
4. Place beets in a bowl, cover, and allow the steam to loosen the skin. Using a spoon, remove the skin from the beets when safe enough to handle. Chop into bite-size pieces. 
5. Tear the greens and steam just until wilted. 
6. Toss all ingredients together and serve or chill to serve cold.

INGREDIENTES:

• 1 manojo de remolachas, lavadas y con las hojas cortadas

• Hojas de remolacha, lavadas y enjuagadas

• 1 naranja mediana, pelada, segmentada, y picada

• 1 cucharada de aceite de oliva

• 1/4 cucharadita de tomillo seco

• 1/4 cucharadita de sal

• Pimienta negra al gusto

1. Precaliente el horno a 425°F.
2. Envuelva las remolachas enteras en bolsas de aluminio, asegurándose de que estén bien cerradas.
3. Ase las remolachas por 1 hora o hasta que un tenedor pueda fácilmente penetrar la remolacha.

4. Coloque las remolachas en un plato hondo, cubra, y permita que el vapor afloje la piel.Con una cuchara, retire la piel de la remolacha cuando sea lo suficientemente seguro para tocar.Corte en trozos pequeños, del tamaño de un bocado.
5. Rompa las hojas y cosa al vapor sólo hasta que las hojas se marchiten.
6. Mezcle todos los ingredientes y sirva o enfrié para servir frío.
