DIRECTIONS
Dough
1. In a medium bowl, stir water and salt together. Slowly stir in cornmeal with your fingers until the mixture forms a soft and moist dough.
2. Form dough into 8 small-medium sized balls. Pat each ball to flatten into a patty.
3. In a large skillet over medium heat, heat the oil. Add the arepa patties in batches until golden brown, about 4 to 5 minutes per side. Transfer cooked arepas to a paper towel-lined plate to drain until cool enough to handle.
4. Slice halfway through each arepa horizontally with a serrated knife.

Filling
1. In a small saucepan over low-medium heat, add the tomato sauce, chicken breast, and taco seasoning. Cook on low for 5 minutes.
2. Add some chicken, mozzarella cheese, and avocado to each arepa and serve warm.
